Smoke & Spice Kraut was born from my desire to elevate the plain white sauerkraut I grew up on - something delicious, but not always exciting - into a bold, flavour-packed experience that could hold its own on any plate. 👑
It’s a treasure jar made for flavour chasers, for vegans craving umami, and for anyone who lives for that perfect smoky note.
Juicy white cabbage and tender Hispi combined for a layered texture, then ferment it slowly with garlic, and a rich blend of chilli peppers variety. 

🔥 Smoked paprika + chipotle + ancho chilli – fermented together create an intensely savoury, smoky flavour that feels almost meaty in depth.
🧄 Powerhouse of wellbeing, Fermented garlic – soft, sweet, and rounded. 
🥬 Two cabbages – a simple trick that creates complexity in every bite.

I can’t tell you enough how much I love this product -  it’s one of my favourites! And I’m not the only one. It’s a favourite among the teams at FERMARY, Rushtons, and Thorogoods too! For its bold, smoky, and immensely satisfying flavour. 😃😋

✨ This is a brilliant find for chefs. It offers all the punch of kimchi but with a different character - smokier, deeper, and easier to layer into dishes. Now also available to order in catering size. 🥳

It’s far from a plain white kraut, and the flavour works beautifully with everything from grilled vegetables to burgers, summer barbecues, and rich bean stews.👍
We love it in cheese toasties, spooned over hummus, wiped feta, or served with slow-roasted aubergine and tahini👌

  • 🤩This is a Miso Roasted Cauliflower Steak served on a creamy, smoky bed of bean and kraut paste. 👌
With these two beauties, It’s bold, gut-friendly, and packed with flavour - perfect for lunch or dinner! @fermary.uk @boldbeanco 

🧡First, make the marinade for the cauliflower: 
With a spoonful of FERMARY’s Jalapeño Sauce, a spoonful of white miso, a bit of Smoke & Spice kraut brine, a little water, and olive oil. 
Mix it all together to get that beautiful marinade. It’s already packed with flavours, that umami and saltiness, so not much salt require. ✨

🧡So, it’s cauliflower time, 
Slice it into thick steaks, pop them into a baking dish, and cover them in that marinade. 
Let them sit for about 10-15 minutes, just soaking up all those flavours.😋
Then, throw them in the oven at 180°C (350°F) for about 25-30 minutes, until cooked. 💫

🧡Now, next I created something unique, mouth watering and super gut friendly with this two beauties, @fermary.uk  @boldbeanco 
FERMARY smoke and spice kraut and Bold Bean butter beans.
Take half a jar of beans, add three spoonfuls of FERMARY’s Smoke & Spice Kraut, and a splash of kraut brine for extra smoky umami kick. 
Blend it all up until it’s smooth, nice and creamy.🤩👌

🧡Smear that creamy paste onto your plate.
Add your cooked Puy lentils to the side, and then place those roasted cauliflower steaks right on top.
Now, we finish it off with a little crunch - sprinkle on some toasted pumpkin seeds, fresh parsley or coriander, and a drizzle of olive oil. 😊
If you want an extra heat, a little drizzle of FERMARY’s Jalapeño Sauce is the way to go.🌶️

And there you have it, a wholesome, beautiful, nourishing, and gut-friendly, complete delicious plate of goodness. Warm or cold, your gut gonna love it. 🥰

New Tropic Kimchi was born from a desire to create something truly different: a vibrant yellow, gut-loving ferment that’s delicious, functional and beautiful. 

I took the sunny flavour base of my Pineapple & Turmeric Kraut and turned it into a new kind of kimchi - one that blends typical kimchi staples like Nappa cabbage, known for its soft texture and unique fermented flavour, with powerful healing ingredients not seen in traditional recipes. 

🌿 Mucuna - nootropic and adaptogen traditionally used in Ayurvedic medicine, known to support dopamine production, mood balance, and mental clarity.

🌱 Chicory root - a natural prebiotic that feeds beneficial bacteria and gently supports digestive health.

🌞 Fresh turmeric - anti-inflammatory, antioxidant-rich

Each ingredient was chosen for flavour, and for how it makes you feel. 
fermented slowly, for at least four weeks, these functional additions become bioavailible, even more beneficial for your body.
